Passion Fruit Cake


Hi guys! Hope you all are staying home and safe. Let’s all stay inside and bake a cake! The recipe I’m going to share with you today is very special to me. It is one that I am very proud of and frankly, I can’t get enough of this incredible cake. It has a soft and moist sponge with a tangy-sweet filling packed with lots of fresh passion fruit.

Ingredients
  • 250 gram granulated sugar 
  • 250 gram butter
  • 250 gram flour 
  • 5 eggs
  • 1/2 cup milk
  • Pinch of salt
  • 1 1/2 tsp vanilla essence 
  • 1/2 cup of fresh passion fruit pulp
  • 1 1/2 tbsp baking powder


For frosting
  • 2 cups of whipping cream
  • 1 cup of passion fruit pulp
  • 1/2 tsp vanilla essence 
  • 3 tbsp granulated sugar
  • 1 tbsp corn flour 


Instructions for cake
  • Preheat oven to 350ºF. Lightly butter two 8 inch springform pans and line the bottom with parchment paper.
  • In medium bowl, sift together flour, baking powder and salt.
  • In large mixing bowl, beat butter and sugar with electric mixer until light and fluffy /about 5 minutes). Add eggs, one at a time, and vanilla mix it well. Add flour mixture alternating with milk, beating well after each addition. Add passion fruit And fold the batter with a spatula until pulp is evenly distributed. Divide batter equally into the prepared pans.
  • Bake 35-40 minutes or until toothpick inserted in center comes out clean.  Cool in pans on cooling grid 10 minutes. Remove from pans, cool completely on grid.


Instructions for frosting 
  • In a small saucepan add passion fruit pulp, sugar, vanilla essence and corn flour and stir in a medium low heat for 2 minutes.  
  • In a medium mixing bowl by using an electric hand mixture beat the whipping  cream until firm peaks form. Be careful not to over-whipping the cream.
  • Place the first cake on your serving dish and spread 1/3 cup of whipping cream on top and them add 1/2 cup of  passion fruit puree on top of the whipping cream. 
  • Add the second cake and place it over the first layer.
  • Frost the top and sides with remaining frosting. Decorate the top with the remaining passion fruit puree.
