Maldivian Style Young Coconut Cake (Gabulhi Boakibaa)



This Maldivian dessert is the one of the most loved desserts in Maldives. This is my all time favorite recipes as well. This is a simple but impressive dessert to make. I’m sure your family and friends will be so impressed when you hand them a slice of it. This is made mainly from fresh young coconut. I am so excited to share this recipe with you; it’s perfect for evening tea (or as a midnight snack). We Maldivians love our tea time and this is my go to dessert and it goes perfectly with savory snacks.


Ingredients

  • 1 cup granulated sugar 2 cup grated young coconut husk
  •  4 tbsp flour
  •  1 egg
  •  2 tbsp Maldivian liquid sugar (optional) 
  • 1 tbsp jasmine water (optional) 
  • 1 tsp vanilla essence

Instructions

  1. Place the grated young coconut, granulated sugar, Maldivian liquid sugar and flour in a food processor and process until smooth.
  2.  Pour the mixture into a mixing bowl and add egg, Jasmine water and fold the mixture using a spatula.
  3. Grease a non stick pan with vegetable oil and pour the mixture into the pan, cover the pan using a lid and cook in a low flame until edges of the boakibaa turns golden brown.
  4. Using a the lid or a plate flip the boakibaa and cook around 8 -10 minutes without the lid. 5. Let the boakibaa cool in the pan or cooling grid 15 minutes. 6. Now its ready to serve enjoy.
